They are this part of the bull that is removed during his youth so that he can be more docile, more fleshy, and behave in a less virile way. When the calves are marked, the testicles are cut and thrown into a water bucket. They are then peeled, washed, rolled in flour and pepper, and fried in a pan. In France, they call it animals.

They are considered an authentic specialty and a gustative delight. Like other abats, Rocky Mountain Oysters can be cooked in various ways: completely fried, cut in large or fine laminates, or marinated.

How to prepare the Rocky Mountain Oysters?

1. With a sharp knife, divide the hard skin around each testicle. Remove the skin (you can remove the skin easily if the testicles are frozen, then peel them during defrosting). Either you prefer to cook them whole or you cut them in lamelles. Place them in a large saucepan with enough beer to overwhelm them, cover, and let stand for 2 hours.

2. In a bowl, mix eggs, flour, corn seed, salt and pepper.

3. Remove the testicles from the beer, drain them, and carefully mix them with the flour mixture. Then, in a large deep saucepan, heat the oil to 190 degrees. Refrigerate for 3 minutes or until golden colouring (until they go up to the surface). Sprinkle on absorbent paper.

4. Serve hot with the sauce of your choice (preferably spicy).
